Pulsed Electric Field (PEF) technology applies short, high-voltage pulses to food and beverage products passing through a treatment chamber. The electric field creates temporary or permanent pores in cell membranes — releasing intracellular content, inactivating microorganisms or accelerating mass transfer, depending on the protocol applied.
